People who don’t live in Tucson often wonder how we desert dwellers get through the hot summers.

“Easily,” we reply, “AC, cool drinks and Kingfisher’s Annual Road Tour.

Every summer the kitchen at Kingfisher gears up for special menus featuring the best of American flavors. Each chef – Fred Harris, Jim Murphy and Jeff Azersky – takes a turn at creating a menu gleaned from various regions in the country. Pastry chef Marianne Banes adds her magic to each menu’s ending. Drinks are also perfectly paired.

First stop, our wonderful Southwest created by Fred Harris.

Appetizers

CHORIZO RELLENO, chorizo stuffed anaheim chile, with goat cheddar, corn, sweet potatoes, charred tomatillo sauce, jicama slaw, sour cream. 10

SPINACH AND ARUGULA SALAD, chipotle vinaigrette, blood oranges, asiago, tomatoes, roasted corn, tortilla rajas. 9

FRIED PECAN CRUSTED SHRIMP, (5) mango salsa, cilantro-lime crema. 17

PAN SEARED VENISON MEDALLIONS, ancho chile jam, pickled serranos, BBQ  potato wedges, patty pan squash.  26

SEAFOOD PAELLA, shrimp, scallops, chorizo, mussels, arborio rice, saffron,  tomatoes, peas, artichoke hearts, garlic, fish stock.  26

SOUTHWESTERN VEGETABLE PLATTER, jicama slaw, patty pan squash, BBQ potato wedges, roasted corn -black bean salad, fried cactus paddles, sweet red chile sauce. 16
